Ingredients
2-3 bags of 72% dark chocolate chips (250grams-750grams)
1/4 cup chopped pistachios
1/4 chopped almonds
1/4 cup pomegranate or cranberries
2 tbsp coconut shavings
1 tbsp coconut oil
Directions
Line a cookie sheet with parchment paper. Chop almonds and pistachios into small pieces. Over a double boiler, melt the chocolate chips and 1 tbsp of coconut oil on low/medium heat. Once fully melted, mix in the chopped pistachios and chopped almonds. Pour the mixture onto the cookie sheet and spread out evenly. Do not make this too thin, as it will become too fragile. While warm, spread the pomegranates or cranberries (or both!) and coconut shavings onto the chocolate. Freeze for at least 30 minutes.
Once fully frozen, carefully cut the bark into pieces either with your hands or a knife and enjoy!
PS – For a more indulgent and festive treat, add chopped candy canes into the mix 😉
